I'm kind of indifferent on tofu since it doesn't really have much flavor. It just depends on what you put it with.

Here's my recipe:
Marinate extra-firm tofu inside the semi-rigid plastic box it comes in. (I get this at the Veggie supermarket right across the boulevard from the CJD Meats Factory Outlet Store.)
Cut the flexible lid neatly all around the perimeter of the box. Drain and gently lift the tofu out and slice it horizontally on a cutting board then put it back in the box to complete the dicing. Dash some soy sauce, toasted sesame oil, and spices and/or pepper sauce over it to bring the level up to about two-thirds. Slosh it around over the sink and then top-up with water and slosh it all around some more. Cover and store in refrigerator for up to a day, but I usually just leave it on the counter for a half hour. In any case it's good to have it near room temperature before adding it to the pot.
I poach/steam some vegetables (French beans or broccoli usually, maybe with a little garlic) in a small amount of water in a pot with a tightly-fitting lid. Use a pot which the veggies just fit in and add only a small amount of water so the level will be at only 1/5th the height of the pot, or maybe a little less. Once the water starts boiling and after the lid is too hot to rest your hand on, start shaking the pot to distribute the boiling water amongst the veggies while holding the lid on firmly with your other hand - If you do this before the lid is very hot and all the air inside the pot has been displaced by steam, scalding water will sputter out suddenly from under the lid! Turn the heat low so that not much extra steam is created during the cooking and the vitamins are retained.
When the veggies are mostly done, drain and reserve the liquid. Put the veggies into a hot frying pan which has been coated with a small amount of oil suitable for frying and stir or shake them around to coat with oil. Add the (thoroughly drained) tofu and stir and cover.
Mix some corn starch with a small amount of cold water to create a thick milky liquid and then combine that with the water drained from the veggies and put this over the mix in the frying pan stirring vigorously until the cornstarch is cooked and turns thick and clear. The proportion of liquid to cornstarch is something like 1 tablespoon to 1 1/2 cup of liquid to make a thick gravy.
You can make this without frying stage, but it’s important to add some oil in any case for dietary reasons.

I like tofu sushi too!
